John, I bought a Corn beef flat from wally world and all I did was rinse it off real good, put a light coat of rub on it and smoked it like I would any other flat. I took mine to 200 because I forgot about it. But chilled it over night and sliced the next morning. Sliced it real thin and ate the stuff like candy.
The length of time to cook it in the smoker would be just like you would any other brisket.
You going to Osage City?
