There is a big difference between 225 and 250. From the timing I will assume you are cooking loin nbacks not spares. You could foil after 2 hours with a little apple juice and thenunwrap at hour 3. That would help. I like to cook spares at 250 for a little over 6 hours foiling for 2 hours after hour 3.

You could also cook longer but there's a chance it will dry out a bit.
