Different people have different results and I sort of thing some of it is the cooker itself. With that said, I wrap BB's at 1 and 1/2 hours and I don't wrap spares or St. Louis style. Both of those have enough fat in them to keep them juicy. I also don't spray mine because I don't like how dark they get but thats just me. I use the tear method to determine when they are done.
