In FL,where the cooker companies have been pushing top,or bottom round,as bbq beef for 50 yrs,the new competition sells a lot of "real original world class TX brisket"that they buy by the pallet from Sam's.
If you control the way it is prepped/held/served and don't mind deli thin sliced beef, a lot of folks serve it on buffets.
I even know some cookteams that use it for caters,since there is no labor and time involved.
Serve plenty of sauce and sides.
Depending on your need,I can see why some folks use it.
Can't speak to the cost effectiveness.
