Cooked some pork and brisket for a friend of mine today, and practiced some ribs. After the big meat was on and the Lang was humming, decided to drive out to the KC BBQ Store. I have never owned a Thermapen, have always relied on dial thermometers, doing my best to keep them calibrated. And do I get a lot of guff from my friends at comps. Well Dan fixed me up, finally got one today, and as the subject line of my post alludes to, it made my cook today so much easier, what have I been thinking all these years?
I know, kinda silly, but hey, great day in the rain here in KC under the EZUP in the backyard. And congratulations to everyone that got some love today at the comps.
By the way Dan, the rub was right on.
