I am signed up for the big cookoff in Washington, DC later this month. They sent us their competitors handbook which is 23 pages long and has 3 forms that need to be signed and faxed back to them for food handling safety and fire safety.
I guess it is no surprise that Washington, DC would have the most requirements, being the home of all those government agencies.
