People have done exactly as you suggest, and the most successful end up cooking thighs drenched in margerine or oil. I don't think of that as bbq, I think of it as confit, yet that is where the current rules have led us. I do it, but I would be just as happy if they made it illegal, because I don't think of it as bbq.
