I would say an Ole Hickory; many sizes to choose from depending on how much you will be cooking. But whatever you decide on, make sure it is NSF approved. Someone I know of purchased a smoker for a restaurant, only to find out it wasn't certified. He had to sell it for one heck of a loss, and ended up buying an Ole Hickory. Expensive mistake.
