well i'm in the process of changing over the concept of my restaurant.
so the amount of meat i need to smoke for the weeek i'm still not sure yet.i'd say about 100lbs of meat/day.
but menu will have side ribs, baby backs, beef ribs, pulled pork, brisket, smoked chicken wings and smoked wings.
i dont have experience with commercial smokers of any kind
i've been using a bradley smoker to do most of my experimenting.
so far with pretty good results. but too small to use for commercial use. unless have 2 of them. yes i know its not the real deal. but thats what i can get my hands on. and tending an offset smoker wont be ideal for me.
the most i want to spend will be under $4000
theres not much of a selection here in vancouver with smokers, and smoke houses.
space is an issue too, i cant have an ole hickocy el-ed model its just way too big
i'm sure i can find access to seasoned hardwood.
