A bunch of years ago I was part of a food show at NYS deli and Dom was helping me pitch my sauce to Zweigle's. Dom already had the exclusive shipping for the Zweigle's products and he really liked my sauce. We wanted to be able to offer it along with the hotdogs. I had a preliminary deal with Zweigle's after the show and we were doing "big batch" experiments at their facility and working on a statistical process for the product. After we nailed it Zweigle's came back to me and said that they just wanted to sell my spice in a packet and not as a completed product. The deal fell through.
There is something about the triple grinding that breaks up the burger correctly and there is something about using 80-20 burger that makes it work. I felt the packets wouldn't work because people would not 3x grind or use the right burger so the end result would vary.
