Age it in your fridge no more than 3 weeks..... just because you don't know the kill date. Then again, you don't know what the kill date us from the pack date either, unless you talk to the slaughter house and most folks can't do that.
Trust me when I say this, which goes against all the other advice you got... if you open it and it stinks like something died.... you know it's bad..... plain and simple. It will have a musky smell to it. You can rinse that off.
So give it a try. For the next time I would try to find the box it came from. Wont be the correct kill date like some have alluded, but will give you an idea of kill date.
