I am saying the collar is likely a part of the shoulder. But Instead of presuming anything I have an email into Snake River asking them to clarify, I do not use high end pork, IBP and EXCEL is my source as it is almost everyones whether they know it or not.
However, instead of letting a team find this out the hard way, I am doing the right thing in letting them clarify it as it is their proclamation that needs to be backed up(as it pertains to the KCBS which is the largest Comp Cooking Organization) and my findings will be sent to the KCBS Office so a word of caution can be sent out if it is beyond the limit of the rules as deemed by the proper folks in the Rules Committee.
You see unlike some, I do not just sit back and allow folks to make mistakes. That said, I do not think you can just buy this meat, cook it, and take 1st in pork.
