I was browsing my local (BJ's) warehouse club's meat case yesterday. They had a couple cases of beautiful butts on display. (They were $1.59/lb, but that's not the point here.) All were in the 10-12 lb range. Until now, their usual size has been 6-7 lbs and largest I'd ever seen was barely (and, rarely) 9 lbs. I can't help but wonder if this signifies anything significant, e.g., farmers reducing the size of their herds by marketing the older/large animals and, perhaps, signifying a coming price increase.
