I'm going to be smoking some venison snack sticks as soon as I find out how long I have to leave this cure on. I ground it yesterday, mixed in some pork fat, and mixed in 5Tb of Tender Quick cure to the 30lbs of meat. Now, can someone tell me how long I need to leave this ground meat sit with the cure before I proceed with making my sticks and cooking them? One recipe I was looking at said 2-3 days but I am struggling to find much information on this question. Thanks for the help.
