Overnite is usually fine with ground or thinly sliced meat. You still want to keep them in the fridge or freezer when done drying and/or smoking though. Not like the commercial stuff (even that goes south after awhile). It will go bad, rancid or mold on you if it's not kept cold or froze. A couple days is fine at room temp probably, I wouldn't go more.
