dry baby back ribs

got myself a sm-160 from cook shack.
been playing around with it for a few months now and still cant seem to get a nice fall of the bone baby back ribs.

cooking temp. 225 for 2:30 - 3 hours.

recently tried putting a water pan in the smoker to increase the humidity. but still the ribs are dry

followed the cookshack instruction cook for 2 hr but still not tender enough.

what am i doing wrong?
