First thing,throw that instruction book away,2 hours at 225*-230* for 3 hours just made em mad>Jack that temp up to 265* then cook em 2 hours then wrap in foil for 30-45 mins useing a toothpick to run in between the bones checking for tendermess. then remove em from foil apply glaze back on cook 15 mins. I dont cook on this type cooker but this process works no matter what type cooker.Get rid of that water pan
