on my first cook i didnt touch them at all. the ribs on the bottom rack were crispy n dry. thats why i tried rotating them so it cooks more evenly.
and this is @ 225 cook temp. with 3 wood chunks is less than 8oz of wood.
i will try it again and leave it alone.
