Sauce only in the foil for me. I start meat side down in the foil with sauce. After 30 mins I flip the ribs and cook for another 30 mins. I check for doneness, and if they are done I leave them on the cooker a few mins,with the foil open.

The foil gives a better bite or more tender bark in my opinion.

Also , like someone said above, the size of the ribs makes a difference. I like a heavy IBP loinback. Just keep practicing to come up with a method you like.
