yes i left it close the whole time. its brand brand new.
tried the wrap method.
ribs came out more tender fall of the bone. but not the texture is something getting used too.
i mean the look on the bone sorta looks like its been boiled. yes i know wrapping the ribs is pretty much steaming then tender.
maybe i wrapped them too long? 2.5 hrs smoking then another 1-1.5 hr wrapped.
