Especially when the main course is being served and not self serve. You control the serving size and have total control of the number of portions. There is also a known guest count. How can you screw that up?
We've been going to KCBS banquets since 2004 and it always surprised me that an organization with world class cooks outsources the meal to a complete 3rd party. We even have a top cook that is an executive chef at a major hotel near the KC airport. Hello!
