Gotta agree with Steve on this one, we were in the same line together fairly close, the west buffet line ran out of carved beef while we were still putting salad on out plate at the opposite end of the line. The carver then disappeared for several minutes, to return with a hotel pan of thin-sliced something or other that was very fatty and sitting in a greasy au jus. By the time we got up there, hardly anyone had taken them up on the substitution. So I walked over with my plate to the east buffet line, where there was no line at all. The carver was using a knife to skin meat shards off of the bone, and never did I see another hotel pan of anything go to that line after that, nor another beef roast to be carved.
But I did eat my asparagus, Mom would be proud.
