I've got a whole pork shoulder and a brisket. The brisket will be on the WSM and then I want to do the shoulder on the kettle.
All I'm really concerned about is the first 6 hours of the cooking....I'm going to move it to the oven once it hits 160.
My problem is that I need to leave my wife in charge of the process at the beginning of the cook. The WSM won't need to be touched once it starts but I'm not sure about the kettle. I want to set it up so that she doesn't have to touch it........she just doesn't get it.
