Well said!! I was not knocking his skills by no means but i think he took it personal like i said If i was paying the wages my pit master would have cooking time on some pits and not just school alot of pits out there and they all cook different and alot of the pits these joints use sit out back of the building not all but alot so one would need to know how to handle the pit in weather yea most joints try to keep the pit dry but what about the wind,heat,and cold.
