Reminds me of an old saying.."I used to want to be a cowboy now I think I are one". What he doesn't realize is just because you got the hat, the rope and cowsh*t on your boots don't make you a cowboy any more than owning a couple barrels makes you a pitmaster.
I don't have a clue how much money this restraunt is investing in this venture but being located in downtown Tulsa I would guess that $500K would be a minimum figure. The last person I would want to hire is someone that doesn't have a clue about being a pitmaster or has no respect for what it takes to be one. The person I want is one with the credentials to back him/her self up with. Someone that can come in onsite and tell me exactly what we need to do to get the doors open, start feeding customers and make them leave happy.
