MUST be wood. That goes back to my childhood. And to take it all the way, for me that is, the bbq should be served on waxed paper. Now that really tells you how old I am.
An old time joint in Arkansas cooked over real burning wood and gave you some slices of pork, crispy on the outside, topped with a streak of wonderful orange-colored sort of tart thin sauce -- all poised on a piece of wax paper in a basket, with a pepper and a slice of cheap white bread on the side. It was heaven!
