Yo to All, A friend of mine requested that I smoke some turkeys for him. I told him that I would do it as long as he kept the birds under 15 pounds and brought them to me frozen and four days in advance of the day I cook them, so I could safely thaw them. Much to my dismay, two of the birds are over 20 pounds. I don't want to spend six or more hours cooking turkeys. Since these birds are going to be boned and the meat reheated the next day, there is no worry about the presentation aspect. Would the cooking time be reduced if I split the big birds in half? If so, by how much?
