At competitions , I always try to cook a large picnic along with the butts.
Keep as much skin on as possible and inject with a good juice,salt/sugar solution.
cook just like a butt, wrap around 150 internal. After a couple of hours you should be able to pull out thhe bone . It's done then.
Rest a little while , separate all the muscles and pick out what you like. They will be dark,white and pink meat there. And should be very juicy.
Taste all and I think you will cook them from now on.
