I can't tell you the exact recipe cause I kind of took a couple for Len Poli's (http://home.pacbell.net/lpoli/) site and combined some stuff. And I made my all pork since I don't really like veal. I bought a pork butt that was about 8 pounds, bone in. I use a meat grinder attachment for my Kitchenaid mixer. I wouldn't want to do a lot of sausage with this set up, but since I never do more than about 5 pounds or so at a time it works ok. I cut the pork into about 2" cubes and put it in a pan, and into the freezer to just firm up a bit. I took about a half pound of bacon and but it into pieces about 2". I mixed by spice and some dry milk powder (as recommended here) and dissolved into about 1/3 cup of ice water. I ground the meats together. I then used the mixer (I am lazy) to mix the ground meats and spice slurry together. Since I had to do two batches I then further mixed the two batches by hand to combine. I used the attachment to stuff into casing.

I grilled the sausage till it was done over direct heat.

If you want exactly what spice mixture I used let me know and I will find it. I might add a bit more of everything next time to kick it up just a bit more, but they came out really well.
