Just an fyi. When I do slaw I ofetn use 2 three bags of slaw mix from Sam's instaead of a 5 pound bag from food service companies. With that 6 pounds of slaw and about a quart of my mayo based slaw dressing I get 6 quarts of slaw.
I don't care how good a cook thinks his slaw is or of how often folks say someone's slaw is, some folks do not like any type of slaw so you should not need a portion for each person yet I usually cover myself since it doesn't cost much to make and I am one that rather be safe than sorry with food portioning. Hear too many stories of people getting a better price and saving money yet they run out of food early..... If a caterer did that to me I'd be very ticked off..... Rememeber, people are relying on you to provide a FULL meal for ALL of their guests.
