If I cooked a packer for only seven hours you'd need two strong men to pull the slices apart. Butts would have to be chopped because they'd be too tough to pull.
Are you cooking flats, smoke steaming, butterfying pork for slicing or some other such technique?
Not arguing with you, just wondering how you acheive contest-grade product with that time/temp combination.
