A true baby back rib is a full rack of ribs from the loin section that weighs 1.75 pounds or less. A rack this size comes from a hog that weighed less than 225 pounds, live weight. Most hogs today weigh around 275 pounds when they are butchered. This is why you seldom see back ribs that weigh 1.75 pounds or full racks of spare ribs that weigh less than 3.5 pounds.
