Good point Mike. Definitely a lot of different answers to that question. That being said, I like your chicken rub (Oakridge) and Slabs Stephy Style on chicken. Answers would also probably vary based on whether it was a comp cook or not. I did some chicken on the WSM a while back with Dizzy Pig Jamaican Firewalk rub and Snead's (very peppery) sauce. I'm sure it would bomb at a contest (way too hot) but went over well with the family and friends.
