I cook mine like I said for around 8 hours I also inject which helps with moisture. I cook at 250, like you said what is the actual temp? So lets say I try and cook between 250-260. I mostly cook flats but sometime cook whole packers after trimmed weight about 8-9 pounds so that could make all the difference if you are cooking 15 lb briskets. I also wrap my pork butts and brisket about half way thru so that might be another reason for the cook time. After they reach the desired temp they go in a cooler wrapped in a towel or sometimes just in a cooler.I too am not arguing just telling how my pork and beef are cooked on my smoker.
