hand washing, gloves, smoking/tobacco in presence of meat, not cooking the meat that was inspected, torch to restart a pit with meat still on the pit, not attending the cooks meeting, the whole pork parting issue, quiet hours violation, and I could continue. All are violations of the rules, most wouldn't be gaining an advantage because of breaking the rule, but they knowing break the rule.
