Its 8:15 am and I kept an eye on it with a Redi Chek and it has really suprised me with the temp and wind it swings about +/- 15 degrees but recovers really fast.
I put Brisket and Butt on at 9:30 last night and did 180 for 6 hours and ramped up to 240 and its doing great. Don't know how the meat is going to be but brisket is at 156 as of this post...
I'm open to comments suggestions. I considered this an expendable cook. If it didn't work out it was OK but I think the neighbors will love us this afternoon!
