I have been hired to cook for a wedding in August. How much ham and Chicken would you say I need. I have a pretty good idea but looking for opinions.
Green Beans (just plain boiled beans)
Pasta Salad (Vinegar Style) bride doesn't like mayo
Tossed Salad (croutons,grape tomato and 2 dressings)
Rolls for Ham
This will be for approx 400 people. Their guest list right now is 575 so 400 might be on the low side but I did let them know I need a solid count a week if not more ahead of time. Also I will traveling 530 miles round trip for this job. They will also be supplying a full commercial kitchen.
