For any that are interested, here's the recipe, I did do a couple tweaks but mostly just with the optional added things.

Fat Johnny's Cheesy Cornbread Muffins
1 cup AP flour
1 cup yellow cornmeal
1 T baking powder
1 tsp salt
2 T sugar
1 cup cut corn/canned corn
1 egg, beaten
3 T butter, melted
1/4 cup fine diced onion
1 cup milk (mebbe just a splash more, I like buttermilk)
1 cup shredded cheddar
Pickled jalapenos, habaneros, diced ham or bacon to taste, homemade sausage is good in this too, a little bbq or Cajun seasoning if you like. Spoon on top of hot chili, stuff with cream cheese blend or a ‘meat treat’ in the middle and bake in muffin tins or just baked in a pan
Preheat oven to 375-400*
Mix all dry ingredients. Add the wet ingredients, mix well. Fold in the corn, onions and cheese and other stuff. Mix. Spoon batter into muffin cups (9) - bake 375* for about 18-20 minutes. Easy Peasy. Longer if baked in a pan or on top of chili til knife comes out clean
