How many pounds of sausage/hamburger will you be making each time? If you're only going to be making 5-15 lbs at a time, then I think your budget is just fine. You could probably even get by with a Kitchen Aid grinder attachment (supposing you already have a KA stand mixer) or Rawtalent's link below, that's also a good one.

However, if you're thinking about grinding over 20 lbs. each time you use your grinder, I would seriously recommend you save up some more dough and get a more expensive grinder.

Case and point, I grind up several deer each year and make homemade sausage as well. Each time I run my grinder, I make well over 30 lbs at a time and I couldn't imagine doing this with anything less than a 1 HP size 22 grinder.

I have the Cabela's 1 HP model and am very happy with it. I paid well below their asking price because I caught it on sale, plus used some Cabela's bucks I'd saved up on my CC and also had a $20 off coupon.

You'll also want to look at getting a spare knife, a "kidney plate", a bag horn, a tape sealer and some poly meat bags. Another nice-to-have is a remote foot switch. You can get all of this stuff at Butcher & Packer or Allied Kenco to name a few.
