Yo Mike, I did little deer hunting this year, but I didn't have to hunt at all. There were six deer taken off the 75 acres I live on, and I got to help butcher them all. My cooking partner bought this grinder from Bass Pro and it has a 3/4 horse motor. It will grind 240 pounds of meat per hour. On the big plate, it will grind the meat as fast as you can drop it in the feeding tube.

We had three different grinding parties this year and each time used a different ratio of pork to venison. The one we liked best was 20 pounds of trimmed venison, 12 pounds of pork shoulder and 3 pounds of bacon ends. The mixture works well for summer sausage and burgers. I haven't been able to cook any of the burgers on the Kettle, but they hold their shape nicely in the skillet and leave little grease.

Care to share your mix ratios for ground venison?
