Nope, it doesn't sound like you're over-grinding the meat at all. And yup, the kidney plate can also be used to stuff casings, just don't put the knife in when you use it that way. For grins, next time use your kidney plate with the knife instead of the 3/8" plate. I picked up this trick from the owner of Allied Kenco. Basically, it removes the need to dice the meat before you grind and the rougher chop (than from the 3/8" die) from the kidney plate does help the meat move through the final grind much faster and easier with much less stomping necessary.
