The reason so many competitors chemically enhance their entries is the "wow" factor. You get one chance with one bite to impress a judge. A lot of competitors will say that the entries they submit are too spicy for to consume for a normal meal. I would be willing to bet that MSG is used quite commonly by many cooks on the contest circuit.

I mean you and your wife no disrepect when I say this, but people with any type of food allergy should not judge. The judges have no idea of what type of spices or additives contestants use. It is as you said, Russian roulette if they do judge. This does not mean a person with a food allergy cannot be a part of the judging process. Table captains do not have to sample the entries, nor do the volunteers at the receiving tables.
