Actually, from the meeting.. it was discussed that the cut probably was legal (if it weighed 5lbs) prior to the upcoming rep advisory because previously, KCBS never officially described what a Whole Shoulder was. And since the pork collar IS a part of a whole shoulder...but it's from a eurpoean cut shoulder.. it would have been considered legal technically.

They showed a video on how to cut a pork collar. And it was mentioned that you can follow the same instructions and cut basically the same chunk from a US cut shoulder and it would be legal to cook if it were over 5 lbs.

The only difference between the legal and illegal is where the shoulder was cut from the side of the pig.
