You are correct that the only thing that matters is the pork starts out as a U.S. standard butt, picnic or whole shoulder. Teams can and do many creative trimming methods to achieve their goals. The point of contention was always that Snake River was selling the collar on its own, unattached to another cut, and that for the most part they were underweight. It looks like the adoption of U.S. standards will eliminate the Snake river cut , even if they go to a heavier cut.
