We split them in half and season the flat sides with some evoo and s&p let them go on the smoker until they are soft. Since there is no cavity we season it when it comes off after we have used the tines of a fork to get the squash into long strands. I use the same types of seasonings that I would for spaghetti a little Parmesan some fresh basil oregano etc.
