I have marinated and rubbed my ribs the night before for years in comps. Any dry ribs I might have had was from being overcooked. I have never noticed any "hammy" texture either. I don't see any added benefit by spraying while its cooking except to the outside of the meat. I don't believe the meat will absorb any added liquid once it is cooking.
