Bunny, when I answered yes I was stating a fact I see as a MCBJ. Judges scoring down for small thighs, up for too tender mealy ribs. I'll bet if we could gps the 180's, we would see "hot spots" that score a bit up.
Before I entered the Sam's series at Woodbury Mn. I discussed with a friend Mn vs Madison Wi. He said if I cook Madison, go a bit too done. For Mn, play it straight. The reason being Mn has a stable BBQ envirnoment compared to the contests that come and go in Wi.
