it depends on what u want. i love my fec bc i CANT oversmoke food. ok you can, but its much more forgiving than a stick burner. I also have a little grate I built so I can use logs in my firebox, too if I want more smoke.
IMHO it's the cook. practice w any of them and you'll get wht you want consistently.
as for maintenance- they all have them. In the 5 years or so I've owned my 500 I've never had more than a blown fuse dur to dirty power until last week; my first shear pin broke. and mine is in weather 24/7- including hurricane ike. pit fared better than ,my house!
SPs and OHs have aintenace, too- chain or gear drives, motors, fuses, blah blah. pellets get wet if you let them. Never been an issue for me.
