I cook on a Caja China (as well as an OK Joe offset and a Green Egg)but since it uses so much charcoal I cook several pork butts or several chickens in it - so I have to make sure we're having plenty of guests.
It's basically a charcoal-fired oven with the charcoal providing heat from above the chamber. If you want a smoked-meat flavor you'll have to purchase the optional smoker attachment.
