I cook on a 22.5 WSM at the temps you describe. If the pit
wants to run at 275 lid temp, cook for 2.5 hours and wrap
for 45 min. Then 15 min to dry amd 15 min to set sauce.
If it's determined to run at 300 cut smoke time to 2 hours
and then wrap. Any longer and the ribs get too much color
IMO. This has seemed to work for me. Good Luck!
